Kumquats from the Antilles Confits au sucre de canne

The kumquat, the smallest member of the citrus fruit family, comes from Asia. Its name in cantonese, kin kü, means 'golden orange'. Accustomed to tropical climates it has adapted easily to the soils of the multi-cultural Antilles. Its slight bitterness and edible, golden -orange, peel makes the kumquat an ideal candied fruit.
